Breakfast, the most important meal of the day, some might say, or just another chance to master some yummy sweet dishes. In this occasion I prepared some French Toasts, in the way I learnt back in the days in a Colombian-style. Basically it’s all about preparing your pancake batter and finding the right bread to coat and later pan-fried.

My recipe is literally ridiculously easy, I learned it when I was like 7 (as pancakes were my favourites and couldn’t get enough from them). It goes like this. 1egg, 1 cup of plain flour, 1 cup milk, 2 tbs sugar, 1 pinch salt and one ts of vanilla essence. Mix all together and voilà! For the bread, I bought a brioche loaf in Waitrose.

For garnishing we got some season berries, and my always favourite, maple syrup from Aunt Jemima.

Happy Sunday!!
