A very important rule of the diet I’m still doing (little applause for me) is to not consume processed products, as nowadays there are so many chemicals in everything we eat, that is literally not worth it. I know we are in an era in which time and efficiency are everything, but we can’t overlook the fact that we are poisoning ourselves with every processed food we consume.
I love mayonnaise, but oh my life! Have you check the chart in the back for its contents? Well… It is all about sugar and food substitutes. So, what is a better option than to substitute it with the real thing, well in this case, with homemade Aïoli. For those who don’t know, Aïoli is pretty much like a mayonnaise with a hint of garlic. The hint, is up to you obviously, it depends on how many garlic cloves you put in it.
The recipe is very simple:
1 egg plus 1 egg yolk. 1 cup of sunflower oil. The juice of half a lemon. 2 garlic cloves. A pinch of salt. If you want stinger flavour add an extra garlic clove. Do keep it closed and refrigerated to use it another time.
Put all the ingredients in a container and blend them with a hand blender for up to 3 minutes and that’s it!
